Veal hip is a juicy and tender piece of meat, without much fat. It comes from the posterior third, located in the highest part of the leg. Triangular in shape, it consists of three main pieces: the corner, located at the sharpest angle; the flowerbed, at the opposite end; and the heart, in the center.
The hip is suitable for all kinds of preparations, although it is an ideal meat for filleting. The tail is usually used whole, while dishes such as filet mignon or roast beef. For its part, the heart is often used to rump steak, which are 500gr fillets for two people.
Regarding the rump steaks, we especially recommend them because the rump is the highest category piece of fillets of the ball or rear hub. Being tender and juicy, it is used grilled, stewed or fried.
Similarly, the hip can be stewed or roasted, since it is a very versatile piece in the kitchen. For this reason, and for its excellent flavour, the hip is one of the most coveted noble pieces of veal, since all the dishes you prepare with it are spectacular.
You can also use the whole piece or in two pieces to roast it in the oven. Failing that, you can remove two sub-pieces from the hip, one of them cylindrical in shape, from which imitations of tourned.
